Welcome to High Performance Cookers!
If you're a fan of seafood and looking to cook up a delicious Cajun feast, then cooking crawfish in a boiler is the way to go. Crawfish boils are a popular tradition in southern Louisiana and are a great way to bring friends and family together over a mouth-watering meal. So, grab your High Performance Cooker, and let's get cooking!
Before you start cooking, ensure you have all the necessary ingredients. Here's what you'll need for your crawfish boil:
- Live crawfish
- Cajun seasoning
- Red potatoes
- Corn on the cob
- Sausage
- Onions
- Garlic
- Lemons
You can also add other vegetables and seasonings to suit your taste. Feel free to get creative with your crawfish boil!
Start by thoroughly rinsing the live crawfish in cold water to remove dirt or debris. Then, purge the crawfish by soaking them in a mixture of water, salt, and vinegar for about 20 minutes. This will help clean out their digestive tracts and ensure a cleaner boil.
Fill your High Performance Cooker with water, leaving enough room to accommodate all of your ingredients. Add Cajun seasoning to the water to give it that classic spicy flavor. Bring the water to a rolling boil before adding the rest of your ingredients.
Once the water is boiling, add the red potatoes, corn on the cob, sausage, onions, garlic, and lemons. Let the vegetables cook for 15-20 minutes until tender.
Once the vegetables are cooked, it's time to add the crawfish to the pot. Make sure the water is at a rolling boil before adding in the crawfish. Once crawfish are added the rolling boil will disappear, wait approximately 90 seconds and it should come back to a rolling boil, then cook the crawfish for 2-3 minutes, then shut off the gas and let them soak.
After letting them soak in the hot water for an additional 15-20 minutes, start taste testing. This will allow the crawfish to absorb the flavors of the Cajun seasoning and become even more flavorful. Once your taste test gives you the right amount of spiciness or taste then you can remove them from the pot.
Once the crawfish have soaked, drain the water from the pot using a colander. Transfer the crawfish and vegetables to a large serving platter or table lined with newspaper. Crawfish boils are traditionally served family-style, so invite your guests to dig in and enjoy!
Now that you've cooked up a delicious batch of crawfish in your High Performance Cooker, it's time to sit back, relax, and enjoy your meal. Crack open a cold beverage, grab a bib, and get ready to indulge in some mouth-watering Cajun flavors. Don't forget to set out some extra Cajun seasoning, hot sauce, and butter for dipping!
After you've finished your meal, it's time to clean up. Discard any leftover shells and vegetables, and wash your High Performance Cooker with warm, soapy water. Properly storing your cooker will ensure that it lasts for many more crawfish boils to come.
