How we calculate this (methodology & assumptions)

We keep the math conservative and out in the open:

  • Your current setup is modeled as a typical pot + jet burner: ~90 lbs per batch, ~55 minutes per batch, ~2.9 gallons of propane per batch. Those figures come from before-data reported by real HPC commercial customers in phone interviews (August 2026).
  • HPC propane per boil uses published data for the 40 Gal (boils 20 gal of water in under 8 minutes on less than 1 gallon of propane) and 140 Gal (75 gal of water in under 15 minutes on 2.6 gallons). The 60, 80, 100 and 120 Gal figures are interpolated linearly between those two published points.
  • HPC batch time is set at ~25 minutes, based on customer-reported results (Lefort's Seafood: 240 lbs in 25 minutes; All Star Catering: 20–30 minute batches).
  • Natural gas is converted at 1 gallon of propane ≈ 0.915 therms, priced at an assumed $1.40 per therm. Natural gas matches propane speed only with 2-lb commercial gas service.
  • Fuel price assumes $3.25/gal propane (LA-area average). Adjust mentally if your price differs.
  • Season assumes a 26-week Jan–June crawfish season.
  • Time figures are total pot-attended crew-hours. If you run several pots or burners in parallel today, your wall-clock day looks different — but the crew time tending those pots is the same.
  • Seafood equivalents are rough pot-capacity conversions relative to crawfish.
  • Customer-reported figures are individual results, not guarantees. Every dollar figure on this page is an estimate.
